Tampa, here we come!

Spencer has been working in Tampa the past few weeks. He came home for our beach trip then returned. Sawyer and I had made plans for VBS, but once it was over we boarded a plane and headed to Tampa to see Dada!! Not sure who was more excited.

Detox eating

After our recent trip to the beach and indulging in some yummy food and drinks, my body needs a much needed detox. Here are a couple of things I found to help: 

Prep time: 5 minutes

Yield: 1 serving

Serving size: 1 drink

Ingredients

  • 1 banana, frozen if possible
  • 2 celery stalks, chopped
  • 2 handfuls kale
  • ½ Tbsp all-natural, organic peanut butter
  • ½ red or green apple, chopped
  • ½ cucumber, diced
  • ½ cup unsweetened vanilla almondmilk
  • ½ cup - ¾ cup ice if not using frozen banana
  • Optional*:
  • 1 tsp Stevia® or honey (optional)
  • *Optional ingredients are not included in nutrition calculations.

Instructions

  1. Combine all ingredients into a blender and blend on high speed for 30 seconds to 1 minute until drink has reached desired consistency.
  2. If not using a frozen banana, then add ½ cup to ¾ cup chopped ice cubes to blender.

I left out the peanut butter, almond milk, and sweetener. I didn't have it on hand. It was still very tasty. You just have to get over the fact it's green!!

Let it Snow!

Well, on Tuesday, January 28th we were supposed to just receive a "light" dusting of snow.  Little did we know it would stop Birmingham, Alabama in their tracks.  Stranding us away from home and our families.  I received the school cast around 9:50 stating that Jefferson County school would be closing at 10:30 am.  I was very excited.  I was ready to go home!  Little did I realize how cold it actually was outside and how quickly the roads were becoming dangerous.  We were allowed to leave at 11 and I bolted.  I had also received a text from Sawyer's school stating they were closing.  I wanted to get to her as quickly as possible and home as safe and as quickly as possible.  As I was pulling out of the parking lot at work, I began to slide down the hill.  I never quite learned how to correctly drive in the snow or icy road conditions.    This made me very nervous.  Once I gained some control I slowly made it up the other hill to the parking lot where I stopped to gather my thoughts.  I was on the phone with Spencer and I really wanted to just park and for him to come and get me.  This was not an option.  I had to step up.  I had to put my big girl panties on and deal with it.  I calmed down a little and then began the trek again.  This time I figured out how to make sure my anti-slip was on and put it in the lowest gear possible.  I slowly but surely began to make my way to my little girl. 

Catching Up!

Gracious! It's been over six months since I last blogged. I will be honest though. This past year of teaching has been one of the hardest. I am pretty sure that is why I haven't blogged and I have just been busy being a Mommy. Now that summer is here and I am off work for a couple of months, I hope to get started back. I seem to take lots of pictures with my phone and post them on Facebook and Instagram, but never seem to make here. I'm hoping to change that. I would love to give the blog a new look, but we now have a Mac, so it is a little different for me. Hopefully, I can figure out the logistics. We just returned from our annual family beach trip. I have plenty of pics to post.

Happy New Year!! 2014

Happy New Year! I hope everyone had a safe and happy holiday. I am sad my Christmas vacation is over with tomorrow, but looking forward to what 2014 has in store. Last night we had Spencer's parents up for dinner. I have been watching a lot of cooking shows lately and saw a recipe for Steak Oscar. I have been wanting to make this for weeks! So I decided to make it for NYE dinner. It was DELSIH! Basically, Steak Oscar is just a filet mignon served topped with sautéed shrimp and hollandaise sauce. I used The Pioneer Woman's hollandaise recipe.
For an appetizer we enjoyed pears topped with prosciutto , goat cheese, and honey drizzle. We then had a mixed green salad with fresh strawberries, feta, bacon, served with a warm vinaigrette. Our main course consisted of a filet topped with hollandaise sauce and sautéed shrimp, served along side roasted brussel sprouts, and garlic-rosemary smashed potatoes. Might I say again, it was FAB!! It will definitely be served again!
