Sawyer's First Official Hair Trim

Sawyer's hair had finally grown to the point that something needed to be done. She needed a 'shape-up.' My hair dresser agreed to try. If she didn't behave she wouldn't do it. However, Sawyer wasn't a behavior problem. She actually did very well. You cannot tell that much was cut off, but somehow it looks better. Her bangs are now even! Here are a few pics!

Here comes Peter Cottontail!

We had a great Easter weekend! We went Saturday morning as a little family down to the Farmer's Market on Finley Ave. We bought some yummy fresh veggies and some beautiful sun ferns and peace lilies for the front and back porch. I also picked up a geranium for the plant hanger on the back porch. Once we got home we worked in the yard, cleaning up and picking up sticks. You don't realize how big your yard is, until you start working in it. Little Miss even joined in this fun activity.

Sunday was quite the busy day! We left the house at 8:30 and did not return home until 5:30! Needless to say we were exhausted. We worked in the nursery for the first service and then attended the second service. Then we headed to my grandparents for our traditional Easter lunch. Which by the way was FANTASTIC! (as usual) We hunted eggs in the house, then decided it had quit sprinkling so we headed outside for some more egg fun!

Sunday Afternoon Fun!

Up until this week the beginnings of spring have begin to show. So every chance we get we try to spend some time outside enjoying the nice weather. The past few Sunday's have been pretty nice so we took advantage of it.











Sawyer Begins Gymnastics

Well, it has happened. I have enrolled Sawyer in her first extracurricular activity and she LOVES it! She talks about going to gymnastics almost everyday. She loves to put on her leotard. It is seriously one of the cutest things I have seen. I am quite impressed with the place where she is taking. It is a mom and tot class, so I am there to help her. She would listen a lot more if I weren't but I understand why I need to be. She begins with a warm-up of stretching and songs on the carpet mats. We then move to stations. We rotate about three times through at these stations. She practices forward rolls (she cannot do) handstands, balance beam, jumping, cartwheels, backwards roll, and a few others. We then move on to another set of stations where she practices holding herself on the rings and bars and some other balance beam exercises. Chicken Tortilla Soup

This is a very easy crockpot recipe. Just combine ingredients and go!

32oz of chicken stock
2 8oz cans of Rotel
1 8oz can of whole kernel corn (drained and rinsed)
2 8oz cans of black beans (drained and rinsed)
3 gloves of fresh garlic, chopped
salt and pepper to taste
2 boneless/skinless chicken breasts
Juice from one lime
2 tsp of cummin
shake of garlic powder

Cook on high for 4 hours, or low for 6-8

Serve with cheese, fresh cilantro and blue corn tortilla chips!

Greek Quinoa Salad

Here is the recipe:

Ingredients needed:
Quinoa 1/2 c dry
Reduced fat feta cheese (Publix brand) (1/4 of container)
8 Greek olives
Pepper rings (about 6-8 chopped)
1/4 purple onion chopped
1 8oz can of Garbanzo beans (rinsed and drained)
1/2 large cucumber chopped
8 grape tomatoes quartered
1 clove of fresh garlic chopped
2 tablespoons of EVOO
1 tablespoon of Balsamic vinegar
Sea salt and ground pepper to taste
Handful of fresh parsley chopped

Cook 1/2 cup of quinoa according to package directions and let cool. While quinoa is cooking chop your other veggies. Mix balsamic vinegar, EVOO, salt, and pepper in a small bowl.

Combine all veggies, quinoa, and feta, poor dressing over and toss!
